Do some research into the visitors to the fair (you can almost always find this data on the site of the particular fair) and try to find out how these people move among the range of stands. For example, did you know that right-oriented people (where we drive on the right side of the road) always prefer to walk to the right when entering a trade show? If your target audience is left-oriented then they will most likely go left.
